We use this recipe whenever we need a fast, simple meal on the table in minutes. It gives a good kick with plenty of chillies, is packed with Thai flavours like oyster sauce and lime and you'll love having it on hand to whip up some chicken, spices with a crunch of cashew and pair with an aromatic basmati rice.
What we're aiming for: Super fast, simple spicy chicken dish enough for 2 to share with a side of rice
The Components:
2 tablespoons oil (we like to use groundnut or sunflower oil for Thai dishes)
2 garlic cloves, finely chopped
Large chicken breast, chopped into bite size chunks
1 tablespoon fish sauce
4 long red chillies, cut into round slices
2 heaped tablespoons roasted cashews
1 tablespoon oyster sauce
½ teaspoon sugar
A fresh lime cut in half to use its juice as a garnish
The Algorithm:
Get your rice started a good bit before starting on the chicken as it only takes a few minutes for the chicken to cook. We recommend pairing this with an aromatic basmati rice, flavoured with some salt, oil and cloves while it cooks.
- In a frying pan or wok, heat the oil and fry the garlic carefully until golden brown. - Add the chicken, stir and cook until the meat turns opaque. - Stirring after each addition, add the remaining ingredients and cook until the chicken is cooked through.
Now all you have to do is pop it all into a serving dish, season the rice to your liking and serve! Put the lime halves on the table for anyone to sprinkle a bit of lime juice on their chicken for even more flavour.
